Tortilla Pies

Serves: 4-5

Ingredients:

10 (400g) Burrito Tortillas

2 tablespoons oil

1 large onion, chopped

1kg minced beef

2 tablespoons taco seasoning mix

2 cups tomato salsa

10 thick slices (200g) Bega Mild Cheese

2 cups shredded lettuce

3 tomatoes, cut into wedges

1 cup grated Bega Mild Cheese, extra

Method:

  1. Warm the tortillas in the microwave oven on High for 1 minute to soften. Place tortillas in 10 x 3/4 cup capacity non stick muffin pans.
  2. Heat oil in a pan, add onion and cook until soft. Add beef mince and cook until browned. Add seasoning mix and salsa and cook for 5 minutes or until slightly thickened.
  3. Spoon meat filling into tortilla shells and top with sliced Bega Mild Cheese. Cook at 200°C for 10 minutes or until cheese is melted. Top pies with shredded lettuce, tomato wedges and extra grated Bega Mild Cheese.
