Mountain Muffins
Serves: 6
Ingredients:
1 x 310g can creamed corn
1/2 cup milk
2 eggs
2 cups self raising flour (2 'cans')
2 cups grated Bega Tasty or Mild cheese
150g smoked ham, cut into strips
6 Bega Just for Kids Individually Wrapped Slices
Method:
- Whisk together corn, milk and eggs until combined. Place flour, cheese and ham in a large bowl. Add corn mixtureand stir until just combined.
- Spoon mixture into 6 large muffin pans, (3/4 cup capacity). Bake at 200°C for 35 minutes or until golden brown and cooked through. Allow to cool slightly before removing from pan.
- Place warm muffins onto paper lined baking trays. Top each muffin with a slice of Bega Just For Kids cheese. Bake for 2-3 minutes or until the cheese has just melted over the muffins. Serve warm.
