Mountain Muffins

Serves: 6

Ingredients:

1 x 310g can creamed corn

1/2 cup milk

2 eggs

2 cups self raising flour (2 'cans')

2 cups grated Bega Tasty or Mild cheese

150g smoked ham, cut into strips

6 Bega Just for Kids Individually Wrapped Slices

Method:

  1. Whisk together corn, milk and eggs until combined. Place flour, cheese and ham in a large bowl. Add corn mixtureand stir until just combined.
  2. Spoon mixture into 6 large muffin pans, (3/4 cup capacity). Bake at 200°C for 35 minutes or until golden brown and cooked through. Allow to cool slightly before removing from pan.
  3. Place warm muffins onto paper lined baking trays. Top each muffin with a slice of Bega Just For Kids cheese. Bake for 2-3 minutes or until the cheese has just melted over the muffins. Serve warm.
