Better Biscuits with Bacon and Chive Topping
Ingredients:
1 cup plain flour
2 tablespoons self raising flour
pinch of cayenne pepper
1 cup So Light 50% Reduced Fat Cheese, shredded
1/2 cup (125g) Western Star Spreadable Light
1 tablespoon lemon juice
200g spreadable cream cheese
6 rashers rindless bacon, finely chopped and cooked
2 tablespoons snipped chives
Method:
- Place dry ingredients in a food processor bowl. Add So Light 50% Reduced Fat Cheese and Western star Spreadable Light and blend until mixture is combined. Add lemon juice and blend until dough forms a ball.
- Shape dough into 2 x 20cm long logs with a diameter of 3cm. Wrap in baking wrap and refrigerate for 30 minutes. Cut each roll into 1.5cm thick slices and place biscuits on paper lined oven trays. Press with a fork.
- Bake at 180°C for about 20-25 minutes or until lightly browned. Stand 5 minutes before lifting onto wire racks to cool.
- Combine remaining ingredients and dollop onto biscuits. Serve
