Ingredients:

1 cup plain flour

2 tablespoons self raising flour

pinch of cayenne pepper

1 cup So Light 50% Reduced Fat Cheese, shredded

1/2 cup (125g) Western Star Spreadable Light

1 tablespoon lemon juice

200g spreadable cream cheese

6 rashers rindless bacon, finely chopped and cooked

2 tablespoons snipped chives

Method:

  1. Place dry ingredients in a food processor bowl. Add So Light 50% Reduced Fat Cheese and Western star Spreadable Light and blend until mixture is combined. Add lemon juice and blend until dough forms a ball.
  2. Shape dough into 2 x 20cm long logs with a diameter of 3cm. Wrap in baking wrap and refrigerate for 30 minutes. Cut each roll into 1.5cm thick slices and place biscuits on paper lined oven trays. Press with a fork.
  3. Bake at 180°C for about 20-25 minutes or until lightly browned. Stand 5 minutes before lifting onto wire racks to cool.
  4. Combine remaining ingredients and dollop onto biscuits. Serve

To avoid melted cheese becoming stringy, add some acid (eg vinegar, wine or lemon juice) to the dish.
