Better Vegetable Stack

Serves: 4

Ingredients:

2 medium eggplant, cut into 1.5cm thick slices

2 large tomatoes, cut into 1.5cm slices

1 large yellow capsicum, cut into eight lengths

1 large red capsicum, cut into eight lengths

olive oil, for brushing

8 Bega Tasty Cheese Slices

1/4 cup basil pesto

Method:

  1. Brush vegetables with oil and cook on a char-grill pan until golden brown and just cooked through.
  2. Layer half the vegetables into four stacks on a lined baking tray. Place a slice of Bega Tasty Cheese and half a teaspoon of pesto on each vegetable stack. Continue the layering process finishing with remaining pesto and a slice of Bega Tasty Cheese on each stack.
  3. Bake at 200°C for 5 minutes or until cheese is just melted. Serve immediately.
